The Evergreen Salad

Enjoyed as a midnight snack while waiting for Santa or a sweet side at dinner, this retro Jell-O dish is a sticky staple served up at Group Account Director Megan Kimball Menietti’s house.


  • 3.4 oz instant pistachio pudding mix
  • 8 oz can crushed pineapple, with juice
  • 1 cup miniature marshmallows
  • ½ cup chopped pecans
  • 4 oz Cool Whip topping, thawed


  • Add crushed pineapple with juice, instant pudding mix, mini marshmallows and pecans in a large bowl. 
  • Fold in Cool Whip.
  • Mix until well combined.


  • Chill for 1 to 2 hours before serving.
