Peppermint Gooey Butter Cake

Everyone from St. Louis loves a good piece of gooey butter cake. Enjoy with a holiday twist thanks to Billing Specialist Danielle Westfall!

INGREDIENTS

Bottom Layer

  • 2 eggs
  • 1 stick of melted butter
  • 1 box chocolate cake mix

Top Layer

  • 3 eggs
  • 12 oz cream cheese, softened 
  • 5 cups powdered sugar
  • 1 tsp peppermint extract
  • Red food coloring

INSTRUCTIONS

  • Preheat the oven to 350° F.

Bottom Layer

  • Combine cake mix, eggs and melted butter until the batter is formed. Press into a greased 9x13 pan.

Top Layer

  • Beat eggs and cream cheese together until smooth. Gradually add the powdered sugar, taking time to mix in before adding more, until all is incorporated.
  • Add the peppermint extract and red food coloring until the desired shade of red is achieved. Once complete, pour mixture on top of the bottom layer in the 9x13 pan.
  • Bake for 35-40 minutes until top is golden brown. 
  • Allow cake to cool and then dust it with powdered sugar.

SPECIAL NOTES

  • Flavor of cake mix can be vanilla, depending on preference. Recipe works with gluten-free cake mix as well. 
  • Powdered sugar is the traditional topping, but feel free to top with sprinkles or crushed candy canes!
